Hearts of Palm are ideal for making vegan fish. This vegetable has a neutral taste that is made fish-y with the help of seaweed. It’s colour and texture are also perfectly fit for making a vegan fish! Hearts of palm have a flaky sort of consistency that really imitates the delicate texture of fillets of fish.

When shredded, the texture of the hearts of palm really resembles a flaked white fish. This vegetable has a delicate, slightly nutty, vegetal flavour that is sort of like artichokes. Hearts of palm are super versatile and adapt super well to so many flavours. They are mother nature’s way of making fish out of plants!

Nutrition-wise, hearts of palm are an excellent meat replacement. This magical vegetable contains 17 different amino acids and is very low in cholesterol. Hearts of Palm are also rich in protein, which makes them a good replacement in a vegan diet. This is a major plus because it’s important to ensure your plant-based meats are tasty AND full of protein, not just all flavour and empty calories. You want to be powered by plants! 

Seaweed for That Fishy Flavour

You cannot skip the seaweed in this recipe. It gives your hearts of palm that ‘under the sea’ flavour. Seaweed flakes work best in this recipe, as you don’t have to chop up sheets of seaweed. Plus, it’s easier to sprinkle on other meals like veggie bowls or in smoothies.

Seaweed is also excellent to incorporate into a plant-based diet. It’s the best dietary source of iodine, and a good source of iron. Just keep in mind that seaweed is super healthy for you at normal levels of consumption. Very high amounts (we’re talking daily high consumption) of seaweed can lead to too much iodine. There is such thing as too much of a good thing! Normal use of seaweed in your diet though is super healthy! In fact, the protein in some seaweeds, such as spirulina and chlorella, contain all of the essential amino acids you need.

Ingredients
  

Hearts of Palm Fish

  • 1 can hearts of palm drained and well rinsed
  • 1 tsp lemon juice
  • 1 tsp seaweed finely chopped (or use seaweed flakes)
  • pinch salt

Tacos

  • 1 package taco shells

Vegetable Filling

  • 2 carrots ribboned
  • 2 green onions chopped
  • 1 lime (for drizzling on top of tacos)

Spicy Mayo Sauce

  • 6 tbsp Vegan Mayonaise (I use Vegenaise)
  • 3 tbsp Oat milk (or milk of choice)
  • 1/2 lime juiced
  • pinch salt
  • 1/2 tsp paprika
  • 1/2 tsp red pepper flakes (or to taste)

Instructions
 

Hearts of Palm Fish

  • Preheat the oven to 375°F.
  • Coat a baking sheet with a thin layer of oil (or use parchment paper if your prefer not to use oil).
  • Pull apart the hearts of palm in a mixing bowl until they appear shredded.
  • Stir in the lime juice and salt.
  • Add the seaweed flakes (if you’re using seaweed sheets, tear into as small pieces as you can).
  • Mix well then spread the fish out on the baking sheet in a single layer.
  • Bake for 15 minutes until the edges start to turn golden brown.

Vegetable Filling

  • Wash and peel carrots.
  • Make carrot ribbons by simply continuing to peel the remainder of your carrot with your vegetable peeler.
  • Wash and chop green onions.

Spicy Mayo Sauce

  • Add your vegan mayonaise to a bowl.
  • Add your oat milk or milk of choice.
  • Drizzle lime juice into your mixture.
  • Add your spices and salt.
  • Whisk your sauce until no lumps remain.
  • You can adjust the thickness as you like by adding more mayonaise for a thicker sauce, or more oat milk for a thinner sauce.

Assemble Tacos

  • Add your vegan fish and vegetable filling to your taco shells.
  • Top with spicy mayonaise sauce.
  • Drizzle with lime juice and enjoy!

There’s a proper way to cut and peel every fruit and vegetable! I’ve found it’s best to find out what the ‘proper’ way is, because it’s usually the most effective. It will save you time and hassle.

To prepare your grapefruit for this Refreshing Grapefruit Mango Smoothie recipe first rinse the grapefruit! You should always rinse your fruit and veg well. Who knows what it has encountered on its way to the grocer, and as it passes through the checkout.

Now you’re going to segment your grapefruit! Pull off or cut away the peel. Then, hold the grapefruit over a bowl and with a knife, cut the segments of grapefruit from in between the white pith. This technique of segmenting a grapefruit is the same as other citrus fruits. The goal is to remove the membrane and pith, and be left with individual pieces of grapefruit.

To do this, peel your bananas while they’re fresh (but make sure they’re ripe first to get that sweetness!). If you’ve ever tried to peel and frozen you will thank yourself for peeling them before freezing! then, keep your peeled bananas in a ziplock bag in the freezer, so that you always have them on hand for smoothies!

No one who tries these Coconut Sugar Vegan Cookies will even guess these cookies are actually vegan! So what makes them taste so much like a classic chocolate chip cookie? Classic ingredients. This recipes mimics a conventional recipe pretty much to a tee. There’s no flax meal or chickpeas or even banana. (Though I love vegan cookies made with a variety of ingredients, for our purposes traditional works in this recipe).

I use PC Organics All Purposes Flour for the base of these cookies. I’ve made them before with half white and half spelt flour and they are delicious too (but not as classic). Sugar-wise a mix of PC Organics Coconut Sugar and Wholesome’s Organic Fair Trade Sugar makes up the sweet component.

Sugar is the main thing in baking that typically is not vegan. Your typical sugar is made from sugarcane and goes through a bone char process to get its clear white colour. So, most refined cane sugars are not suitable for vegans. Which means vegans need to search out sugars that are specifically vegan certified.

Soft Vegan Chocolate Chip Cookies

  • 1 cups all-purpose flour (or use half spelt flour, half all purpose)
  • 1/2 tsp baking soda
  • 1/4 tsp salt coconut sugar or sugar of choice

  • 5 tbsp milk of choice, plus more if needed
  • 2 tbsp oil or melted vegan butter
  • 1/2 tsp vanilla extract

Instructions
 

Soft Vegan Chocolate Chip Cookies

  • Combine all dry ingredients in a bowl.
  • Stir in wet ingredients to form a dough (keep stirring until a cookie-dough texture is achieved).
  • If your dough is too dry, add a tbsp more of extra milk of choice.
  • Form dough into a ball and wrap in saran wrap. Place dough in freezer into its cold, about 20 minutes. (Or you can place in refrigerator for 2 hours if you are not baking them right away). 
  • Preheat oven to 325˚F
  • Form balls of dough, and place on a greased baking tray.
  • Bake cookies for 11 minutes on the centre rack. (They will look undercooked but will firm up when let to cool).
  • Let them cool on the baking tray 10 minutes.

Vegan Gnocchi with Sausage & Zucchini is a great easy but elevated dish for any occasion. This meal uses my homeade Easy Vegan Sausage recipe, but you can choose to add store bought plant-based sausages if you like.

Vegan Gnocchi with Sausage & Zucchini

This recipe is great because you can make it super quick and easy if you opt for using store bought gnocchi and/or store bought sausage. I do highly recommend using my homeade Vegan Sausage though! It really amps up the dish and makes it an extra special treat.

Vegan Store-Bought Gnocchi

If you want to go the extra mile, you can totally make a homeade gnocchi too! (I’ll have one up on the blog soon). Homeade gnocchi is more time consuming than my Vegan Sausage, so if you do one homeade in this recipe I suggest the sausage. As far as package gnocchi goes, be sure to pick a vegan store bought gnocchi. Some store-bought gnocchis contain non-vegan monoglycerides and other animal-based ingredients. You can grab some vegan Little Pasta Organics Gluten Free Mini Gnocchi or go for some Difatti gnocchi.

Zucchini, Olive Oil & Vegan Parmesan

This Vegan Gnocchi with Sausage & Zucchini uses a super simple topping of olive oil drizzle and grated vegan cheese. The sautéed zucchini and garlic along with the olive oil gives your gnocchi a ton of flavour, so it does not need a heavy sauce. The simple olive oil topping lets you taste the marvellous vegan sausage instead of being drown out by tomato sauce.

I highly recommend having a quality olive oil in your pantry to use for drizzling (as many lower quality olive oils are not 100% olive oil despite claiming so). Ingredients
  

Vegan Sausage

  • 1/2 tbsp canola oil
  • 1/2 large large white onion chopped
  • 1 garlic clove chopped
  • 1/4 tsp sage
  • 1/4 tsp thyme
  • 1/2 tsp fennel seeds
  • 1/4 tsp cayenne
  • 1/4 cup cooked chickpeas
  • 1 tbsp tomato paste  (or strained tomato)
  • 1/8 tsp salt
  • 1/2 tsp oregano
  • 1/2 tsp paprika
  • 1 tbsp soy sauce
  • 1/4 cup sparkling water
  • 3/4 cup vital wheat gluten (CANNOT be substituted for any other flour)

Vegetables

  • 1 large zucchini
  • 2 cloves garlic
  • salt to taste
  • olive oil for cooking

Gnocchi

  • 2 packages store bought gnocchi (or make homeade gnocchi)

Toppings

  • olive oil drizzled on top
  • 1/4 cup vegan parmesan of grated mozzarella sprinkled on top
  • sprinkle fresh herbs of choice (optional)

Instructions
 

Vegan Sausage

  • Add canola oil to a pan and sautée your chopped onion and garlic until soft. Add the fennel seeds, thyme, sage, and basil. Let it cook for another minute.
  • Using your immersion hand blender or food processor, add the chickpeas, onion-garlic-spices mixture, tomato paste, salt, smoked paprika, soy sauce, and sparkling water. Pulse until it’s saucy.
  • Add the vital wheat gluten flour and pulse again until it comes together in a ball. (Since gluten flour is so fine, I like to mix it in a quarter cup at a time. This keeps your flour from flying into the air and making a mess).
  • You should now have a somewhat sticky dough. Divide it into 4 equal chunks. Roll each seitan chunk into a sausage shape, then roll each sausage tightly in aluminum foil. (you can use a layer of parchment paper between the sausage and foil, but this is personal preference). Twist the ends so that the seitan is completely covered in foil.
  • Fill a large pot with a couple of inches of water and place a steam basket in it. Make sure the water does not go past the steam basket or your sausages will get wet! Bring it to high heat.
  • Place the seitan sausages into the steaming basket. Try not to stack them, but a bit of overlap is okay. Let them steam for about 40 minutes, flipping them after 20 minutes.
  • Remove them from the foil and parchment paper (they will be hot)!
  • Set aside (you will pan fry them with your vegetables).

Vegetables

  • Wash and slice your zucchini. Chop your garlic.
  • Add to pan, along with your sliced vegan sausage, with some oil. Sauté on medium heat.
  • Cook your gnocchi according to package directions. Drain.
  • Add your gnocchi to the pan of zucchini and sausage. Stir.
  • Plate and top with a drizzle of olive oil, a handful of fresh herbs of choice (optional) and sprinkle of vegan cheese.

Making Easy Vegan Thai Curry Paste

It takes less than 10 minutes to make hands down the best curry paste of your life. It’s ideal to use a hand blender or a food processor for this recipe. You can, however, make it by hand.

Traditionally, curry pastes are slowly pounded into a paste in a granite mortar and pestle. The hand grinding really makes the aromatic flavours come out. But, most of us don’t have time for that, and you will still get those big flavours with a little help from a modern kitchen gadget.

This recipe for the best Easy Vegan Thai Curry Paste uses a red bell pepper as its base (but you can use any colour of pepper), along with simple ingredients. This paste is complex tasting and bursting with flavours. The savoury and spicy of the garlic, green onion, chilies and spices mix with the sweetness of maple syrup and acidity of lemon to make pure perfection.

How to Use Your Curry Paste

 Add this curry paste to any dish you hope to infuse with curry flavour.

The most common way to use a red Thai curry paste is in a coconut curry. Once you’ve prepared your paste, add a few heaping spoonfuls (about half or more of your paste according to taste) to a can of coconut milk in a pan on the stove.

Ingredients
  

Best Red Thai Curry Paste

  • 1/2 tsp coriander seed (or ground coriander)
  • 1 tsp cumin seed (or ground cumin)
  • 1/2 tsp black peppercorns (or 1/2 tsp ground black pepper)
  • 1 medium red bell pepper (seeds removed and chopped)
  • 2 medium red chilies
  • 1 tbsp fresh ginger (or 1-2 tsp ground ginger)
  • 3 cloves garlic
  • 1 tbsp fresh turmeric  (or 1 tsp ground turmeric)
  • 1/2 tsp sea salt  (plus more to taste)
  • 3 tbsp lemon juice
  • 1 medium lime, zested and juiced (~3 Tbsp or 45 ml juice as original recipe is written)
  • 6 stalks green onions
  • 2 tbsp oil of choice (sub water if avoiding fat)
  • 1 tbsp maple syrup or coconut sugar

Instructions
 

  • To a food processor add crushed spices, red bell pepper, red chilies, lemongrass, ginger, garlic, turmeric, sea salt, lemon juice, lime zest plus juice, green onions (or shallot), oil / water, and maple syrup (or sugar.
  • Blend until a paste forms. (Some small chunks can remain, you do not need to make it completely smooth).
  • Add your curry paste to any meal! It is great added to a can of coconut for a delicious vegan thai curry. (Add about half the paste to 1 can coconut and store the rest).
  • Store curry paste in an air tight container in the refrigerator up to 10 days or more. For longer storage, transfer paste to an ice cube tray, freeze, then store in a freezer-safe bag up to 1 month.

🫶🏼Homemade Vegan Buns, made easy. I make the 🫶🏼Homemade Vegan Buns, made easy. I make the dough in my bread machine. No, I’m not a grandma, and YES you should get a bread machine. Especially if you are vegan (as good vegan bread can be pricey and hard to find). 

~White Vegan Buns Recipe~ 

(Medium, makes ~8 buns)

Add ingredients to bread pan in order your machine calls for (some are liquid first, some last).

Ingredients 
1. Active dry yeast – 2 tsp
2. Bread flour – 3 cups (360 g)
3. Sugar – 2 tbsp
4. Salt – 1½ tsp
5. Olive oil – 2 tbsp
6. Non-dairy milk (unsweetened soy, oat, or almond) – ¼ cup (60 ml)
Warm water (110°F / 43°C) – 1 cup (240 ml)

Bread Machine Instructions
1. Add ingredients in the bread pan
2. Select the Dough setting 
3. When done, remove dough to a floured surface.
4. Divide into 8 equal pieces, roll into balls, and place on a parchment-lined baking tray.
5. Cover loosely with a towel, let rise 30–40 min until puffy.
6. Optional: Brush tops with non-dairy milk, sprinkle sesame or poppy seeds.
7. Bake at 375°F (190°C) for 15–18 min, until golden brown.
8. Cool on wire rack before serving.

🥔These Dill Pickle Hummus Smash Potatoes are crispy, savoury, and totally unexpected.

Ingredients
• 6 small Yukon potatoes
• 2 tbsp olive oil
• 3/4 tsp salt
• 1/4 tsp black pepper
• 3/4 tsp smoked paprika
• 1/2 tsp garlic powder
• 3/4 tsp onion powder

Instructions
1️⃣ Boil potatoes in salted water until fork-tender. Drain and pat dry.

3️⃣ Use a glass to smash potatoes, then season, and roast 35–40 min until golden and crispy.
