Easy Vegan Teriyaki Sauce

February 23, 2022

vegan teriyaki sauce

A little sweet, savoury, and a touch of tanginess, this Easy Vegan Teriyaki Sauce recipe is the perfect addition to vegan stir fries, a marinade for tofu, plant-based chicken and more! This recipe is super easy and can be made in a quick 5 minutes!

Pros of Making a Homeade Vegan Teriyaki Sauce

bottle of maple syrup
spoonful of Vegan Teriyaki Sauce

There are many reasons to skip the store-bought condiments and start from scratch. Most store-bought condiments contain unhealthy ingredients like artificial additives and high amounts of added salt and processed sugars. They also rarely even taste that great, and are often not vegan! This homeade teriyaki sauce recipe makes a sauce using whole ingredients from your pantry. There’s no preservatives and this recipe is much lower in sugar content than other teriyaki sauce recipes.

Another major plus to making homeade condiments like this one is you get a better flavour. This vegan teriyaki sauce uses sesame oil and vegetable broth to give a super delicious flavour. If you’d like to add a little spice, throw in some dried chilli or red pepper flakes.

How to Use Your Sauce

vegan beef stir fry with broccoli

Once made, your vegan teriyaki sauce will last in the fridge for about 1 full week. Be sure to let your sauce cool completely before transferring to an air tight jar or container.

Serve your teriyaki sauce with a lovely vegetable stir fry, or as a marinade for tofu. It also works great as a dipping sauce for asian cuisine and appetizers. If you’re making a stir fry, amp it up by making my Quick & Easy Vegan Seitan Chicken or Super Easy Vegan Seitan Steak. Add the vegan chicken or steak to stir fried vegetables and top with a healthy drizzle of your teriyaki. A sprinkle of sesame seeds or finely chopped green onions can be used for presentation as a garnish to elevate your dish.

Ingredients

Vegan Teriyaki Sauce

  • 1/2 cup soy sauce or tamari
  • 1/2 cup vegetable broth
  • 3 tbsp maple syrup
  • 1 tbsp sugar (I use coconut sugar)
  • 1 tbsp rice vinegar (or sub white vinegar)
  • 1/4 tsp garlic powder
  • 2 tsp freshly grated ginger (or sub 1/4 tsp dried ginger powder)
  • 1 tsp sesame oil
  • 1 to 1 1/2 tbsp cornstarch + 2 tbsp water (can sub flour)
  • 1/4 tsp red pepper flakes for spice (optional)
  • 1/4 tsp sesame seeds (optional)

Instructions

Vegan Teriyaki Sauce

  • Whisk together 1 tbsp of cornstarch (or flour) and the water and set aside.
  • Add all other ingredients to a pot and bring to a low boil.
  • Whisk in the cornstarch (or flour) mixture and let simmer over low heat until thick.
  • Begin with 1 tbsp cornstarch and add an additional 1/2 tbsp if the sauce isn't thickening enough. It thickens more as it cools, so avoid adding too much!
  • Whisk occasionally to prevent any clumps from forming.
  • Serve with stir fry, tofu, or any or your favourite asian-inspired meals!

Super Easy Vegan Ricotta Cheese

February 23, 2022

Super Easy Vegan Ricotta Cheese

This rich and Super Easy Vegan Ricotta Cheese is made with only 5 ingredients! You can make up this mixture in only 5 minutes. Use it to stuff vegan ravioli, add to plant-based lasagna, on top of bruschetta or pizza.

A Tofu-Based Super Easy Vegan Ricotta Cheese

This Super Easy Vegan Ricotta Cheese uses tofu as its base to get the crumbly and slightly wet texture of ricotta. You should use medium firm or firm tofu. Stay away from using silken tofu for this recipe. It has a very high water content and it will make sloppy end result (though you can give it a try if it’s all you have)!

No Pressing Tofu Necessary

Creamy, light, crumbly and glorious fresh. This is the texture of ricotta that this Easy Vegan Ricotta Cheese recipe mimics. Your tofu gives this recipe that crumbly component, with a bit of a moist consistency. So, there’s no need to press your tofu before using it in this recipe. The moisture in the tofu will make sure your vegan ricotta cheese isn’t dry. Simply remove your tofu from the package and add half the block.

Making Your Vegan Ricotta Creamy

The tofu gives your ricotta that crumbly texture and it’s the vegan cream cheese or cashew cheese that will give it creaminess. You can use a store bought vegan cream cheese such as Tofutti dairy-free cream cheese. Daiya also offers a line of vegan cream cheese, but isn’t as good as Tofutti in my opinion (though this is personal preference). Or, instead you can use a soft nut-based cheese. Nuts for Cheese is an excellent choice. or you can make a homeade nuts- based cheese.

Best Healthy Vegan Drop Biscuits

February 17, 2022

Best Healthy Vegan Drop Biscuits

These fluffy drop biscuits are made with heart-healthy olive oil, and are the best homemade biscuits you’ll ever make. Dairy-free, egg-free and vegan they’re a scrumptious treat that everyone can eat. This Healthy Vegan Drop Biscuits recipe also happens to be super quick and easy to make!

Why This Recipe is So Easy

Best Healthy Vegan Drop Biscuits

A big plus that makes this recipe so easy to make is that drop biscuits don’t require kneading or or rolling of the dough! Major time saver, right?

All you do with my Best Healthy Vegan Drop Biscuits is drop the lovely biscuit batter onto your cookie sheet with a spoon, like you would with cookie dough.

These vegan drop biscuits are so easy that they make a great side for hearty plant-based meals. You can whip up the biscuit batter in the time it takes for you to heat up your oven!

Made with Heart Healthy Olive Oil

These homemade biscuits made with wholesome ingredients will beat store bought biscuits any day! This recipe for vegan drop biscuits uses extra virgin olive oil, which is loaded with heart-healthy fats and antioxidants. Olive oil is linked to a long list of health benefits and may protect against inflammation, heart disease, breast cancer, and type 2 diabetes.

Plant-based milk is used in this vegan drop biscuit recipe . Milks made from plants such as almond, oat and soy tend to be lower in fat and calories than dairy, and are full of vitamins. You can certainly use dairy milk if you’d like though!

White flour is recommended for this recipe, but if you’re feeling adventurous by all means try half whole wheat and half white.

Ingredients in Best Healthy Vegan Drop Biscuits

  • All-purpose flour (or whole wheat or gluten free flour of choice)
  • Baking powder
  • Sugar
  • Salt
  • Olive oil
  • Plant milk of choice (almond, soy, oat)
  • Extra olive oil

How to Make This Recipe

  1. Preheat oven to 450˚F.
  2. Line a baking sheet with parchment paper.
  3. Add your ingredients to a large bowl and stir until a dough forms.
  1. Use an ice cream scoop or large spoon to scoop your dough from the mixing bowl (you do not need to the knead the dough as these are drop biscuits) onto a baking sheet.
  1. Brush the top of each drop of batter with olive oil (optional).
  2. Bake for 12 – 15 minutes, or until the biscuits have risen and are browned slightly on top.
  3. Remove from oven and allow biscuits to cool before serving.

How to Make Sure Your Biscuits Rise

As with most baking, having fresh baking powder is key! Baking powder does not last forever. Since it’s sensitive to moisture and humidity, baking powder has a shelf life of between six months to a year. After that time your baking powder might no longer be ‘active’, and might affect the rise of your baking.

Heat is also a major player in getting your biscuits to rise. This drop biscuit recipe calls for baking at 450 degrees. This high heat produces maximum steam, and encourages the biscuits to rise.

Common Questions

Can I use gluten free flour in these biscuits?

Yes! I suggest using Bob’s Red Mill Gluten Free 1-to-1 Baking Flour to make these biscuits gluten free.

How do I store these biscuits?

Store these biscuits in an air-tight container in the refrigerator for up to one week. I don’t recommend storing at room temperature as they will only stay fresh for a couple days out of the fridge. You can freeze these biscuits for up to 3 months in an air-tight container.

What Should I Serve These Biscuits With?

These vegan drop biscuits can be used to make super yummy vegan ‘McMuffins’. Use my 7 Minute Quick Vegan Tofu Scramble along with a couple pieces of vegan bacon or plant-based sausage patty, Vegenaise or ketchup, and slice of vegan cheese to make a breakfast sandwich.

You can also pair these drop biscuits with an oh so comforting big bowl of stew like my Winter Roasted Squash & Tomato Stew. Or, bake up a dozen to go with a big pot of hearty vegan chilli! Or, enjoy in the morning with a lovely vegan fruit jam and a cup of coffee.

Quick Tofu Pepperoni Crumble

February 9, 2022

vegan pizza with tofu pepperoni crumble

Crumbled tofu, a splash of liquid smoke, and a mix of savoury spices make this simple Quick Tofu Pepperoni Crumble. The texture and taste of this tofu crumble make it perfect for topping pizza, giving that classic taste to your pizza pie.

Why Use Tofu for Your Pepperoni Crumble

Make a super quick and surprisingly convincing ‘pepperoni’ with tofu and homeade flavouring! Tofu is ideal for soaking up flavours. It’s incredibly versatile for making vegan meats, cheeses and sauces. Simply add a mix of savoury spices to tofu to get a quick pepperoni crumble with meaty flavour infused into every bite. Just mix up your flavouring, crumble your tofu and bake it in the oven for 20 minutes! Your Quick Tofu Pepperoni Crumble will have a scrumptious chewy texture resembling crumbled pepperoni.

Pressing & Mixing Your Crumbled Tofu

Not all tofu preparations call for pressing. Usually if you are sautéing or frying tofu and want an extra crispy texture, then pressing is the best way to get it. Pressing your tofu removes the excess moisture, and gets that firmer tofu feel. This can help it hold its shape during cooking. Plus, riding it of extra water also ensures your seasonings won’t be diluted.

In this recipe pressing is suggested, but optional. It won’t make a huge difference in the end result. If you choose to press, you can use an actual tofu press, or just lightly press it with your hands before crumbling it. Get in there with your hands to crumble it, rather than cutting it into small pieces. Crumbling gives it that sausage-like texture. It also lets the flavour to be soaked in more when you mixing it with your spice mixture.

Baking Your Tofu

tofu pepperoni crumble

If you’re using your Vegan Tofu Pepperoni Crumble on pizza, you might be temped to skip the baking stage for this recipe. Don’t! Baking these little guys on their own before adding as a pizza topping is essential! It will get you the right crispy texture. Prepare and bake your crumbles ahead of time if you want the, ready for your pizza party.

To bake, spread your seasoned tofu crumble onto a baking sheet covered with parchment paper. Spread the mixture out into a single layer so it darkens evenly as it bakes.

Once your crumble is out of the oven it’s ready to throw on your pizza! Try it on top of salad, on toast with sliced tomato and olive oil, or anywhere your heart desires!

Vegan Ricotta Ravioli with Sage Butter

February 2, 2022

Vegan Ricotta Ravioli with Sage Butter

A vegan ravioli stuffed with homeade ricotta and dressed in a quick and delicious sage and butter sauce. This Vegan Ricotta Ravioli with Sage Butter recipe is easy to make.

Making the Dough for Your Vegan Ricotta Ravioli with Sage Butter

Making homemade ravioli is a real labour of love. It doesn’t, however, have to be time consuming or hard. Whip up this batch of homeade pasta dough, roll it out (either with a rolling pin or with a pasta machine) cut your sheets, stuff and boil!

The homeade pasta dough in this recipe is actually fairly quick and simple to make. You can make the dough for your Vegan Ricotta Ravioli with Sage Butter in a bowl and roll it out by hand. Your raviolis will be a little more rustic this way but they’ll taste just as great! Rolling out by hand is perfectly feasible but you will likely end up with thicker sheets of pasta.

If you have a Kitchenaid Mixer, the pasta attachment makes gorgeous thin silky sheets of home pasta. This Vegan Ricotta Ravioli with Sage Butter recipe is easier to make than you would think!

Stuffing Your Vegan Ricotta Ravioli

Vegan Ricotta Ravioli with Sage Butter

If you’re using a Kitchenaid with the pasta attachment, make your pasta sheets according to the instructions booklet that comes with your attachment. For hand rolled sheets, simply use a lightly dusted rolling pin and roll out your dough thinly on a lightly floured surface. Cut your sheets to the size you’d like to make your raviolis, stuff, fold and pinch the edges to close. It’s that easy! If you’d like to get fancy there are ravioli cutters and stamps you can purchase to make perfectly uniform raviolis. Feel free to make your raviolis for this Vegan Ricotta Ravioli with Sage Butter recipe ‘country style’ and skip the fancy tools!

Stuffing Your Raviolis

Vegan Ricotta Ravioli with Sage Butter

Stuff your raviolis with this lovely vegan ricotta cheese made using tofu and cashew cheese (or vegan cream cheese) along with spinach. You can fill these with whatever you like though! Plant-based meat with vegan cheddar works for a heartier ravioli, or (cooked) squash works beautifully as well. Use what you have or invent any sort of mixture that satisfies your fancy!

Boiling Your Raviolis

boiling homeade vegan ravioli

If you’re made your raviolis by hand or ‘country’ style, they might have more tendency to have little openings where the filling might come up a tad. Don’t worry about this. For those seeking perfection, using ravioli stamps will ensure you have pretty little perfect raviolis that are uniformly sealed. It’s all up to your preference and what you’d like to achieve.

Sage & Butter Sauce

vegan sage butter
vegan sage butter

When you’re gone through the effort of making homemade pasta, you may not feel like making a complicated sauce. This Sage & Vegan Butter Sauce is beyond simple to make and won’t distract your focus from the main event, your ravioli. Fresh pasta also lends itself well to an uncomplicated sauce that allows you to taste the pasta. Sage and butter (or olive oil if you prefer) enhances your ravioli without overpowering it, bringing out the tastes of your silky flavourful homeade pasta.

Super Easy Vegan Seitan Steak

January 29, 2022

vegan seitan steaks on cutting board

This Easy Super Vegan Seitan Steak tastes so much like the real thing. Best of all it’s super easy to make. Enjoy it as steak, or add it to stir fries, sandwiches and more.

Plant-based meats have come a long way! Make a healthy homeade vegan steak at home with this Super Easy Vegan Seitan Steak recipe. High in protein and iron, vegan seitan steak has no-saturated-fat and no-cholesterol! It’s flavourful and meaty, and can be cooked up any way you prepare animal-based steaks.

How Easy is Vegan Seitan Steak To Make?

rolling seitan dough of vital wheat flour
steaming seitan meat

This Easy Super Vegan Seitan Steak recipe is, of course, seitan based! That means it’s made from vital wheat gluten, a fine high protein flour. Wheat gluten has been used as a substitute for meat in Asian countries for centuries, particularly among groups who prefer not to eat meat. Seitan vegan meats are popular because they use only flour, water, spices and various other pantry items (dependent on the recipe variation), so they’re easy to mix up in bowl at home.

To make this Super Easy Vegan Seitan Steak recipe just add ingredients to a bowl to make a dough, then form it into shape and cook it by steaming. To steam you simply add several inches of water to a large pot with a steamer basket, (or metal strainer) and bring to a boil. Place your steaks in the steamer basket and cover with a lid then steam for 25 minutes. Make sure to flip the steaks halfway through. From there, your homemade seitan is ready to use in any dish. It’s all very simple and gets quicker each time you make it.

Getting that Juicy Smokey Flavour

bottle of liquid smoke
steaming seitan vegan meat

Getting the texture of a plant-based meat right is easy with seitan. It has a chewy meaty texture that can really mimic animal-based meats. To get that mouth-watering juicy flavour, a common vegan natural flavouring is used: liquid smoke. You can easily order a bottle online (make sure it’s vegan-most are) and it will last you a lifetime. Liquid smoke adds that smoky yum to your steak, and it can also be used in many other vegan recipes. Seitan is versatile and one of the closest in texture and flavour to meat of any plant-based protein options — so break out the mixing bowls and get kneading!

Is Vegan Steak Healthy?

One of the Vegan Seitan Steaks in this recipe contains: 300 calories, 45g protein, 23g carbohydrates, 4g fat, 5g fiber, 28% iron. Great, right? Compared to beef loin, seitan contains fewer calories and less fat but nearly the same amount of protein. Seitan has as much iron as beef, and one serving contains enough protein for most adults for a day. It has a high amount of vitamin B6 and fulfills your daily value of riboflavin (B2) and niacin (B3). Vegan steak also has zero heterocyclic amines, which are the carcinogens found in animal-based meat.
