These Chewy Marshmallow Stuffed Vegan Cookies are for lovers of a soft cookie. Forget the usual crunchy stuff—these cookies are all about that tender, cookie dough-like goodness. Imagine biting into a perfect mix of chewy texture and gooey vegan marshmallows that just melt in your mouth.

What Vegan Marshmallows to Use

I use Dandies Vegan Marshmallows in this recipe. Most conventional marshmallows contain gelatin (which comes from various icky animal parts). Dandies Marshmallows, on the other hand are proudly plant-based and vegan. All of their marshmallow flavours are derived naturally and their colours even come from vegetable sources! How cool is that?! While traditional marshmallows are loaded with corn syrup, they sweeten Dandies with tapioca and vegan cane sugar.

What’s more, Dandies are the first ever non-GMO marshmallow! You won’t find any genetically modified ingredients in theses fluffy cloud-like treats! Dandies are even manufactured in a gluten free environment on a dedicated gluten free line. Best of all Dandies are free from many common allergens such as wheat, peanuts, tree nuts, dairy, eggs, shellfish, fish, mustard, corn, and sesame), making them a safe choice for all dietary needs.

How should you serve these Chewy Marshmallow Stuffed Vegan Cookies? Go for the classic pairing of cookies with a glass of milk (soy, oat, almond-the choices are endless!) Or, level-up with a rich holiday vegan eggnog, or dip into a lovely rich cup of hot chocolate.

Ingredients in This Recipe

  • All purpose flour
  • Baking soda
  • Salt
  • Sugar (any organic sugar is vegan, or you can use a vegan specific brand (such as Wholesome Organic Golden Sugar)
  • Semi sweet or dark chocolate chips (Camino Semi-Sweet Chocolate Chips)
  • White chocolate chips ( Such as Healthy Crunch White Vegan Chocolate Chips or Camino Vegan White Baking Chips)
  • Soy milk or milk of choice (oat, almond, etc)
  • Oil (canola, vegetable oil, or melted coconut oil)
  • Vanilla extract
  • Mini vegan marshmallows (I used Dandies Vegan Marshmallows Vanilla Minis)

How to Make This Recipe

  1. Add all the dry ingredients except marshmallows in a medium mixing bowl and stir. Then add the wet ingredients, using 4 Tbsp of soy milk at first, and stirring until dough becomes less dry. Add more milk if needed until you get a dough consistency.
  1. Roll dough into 12 balls, then press three mini marshmallows into each cookie and re-roll into a ball.
  1. Preheat oven to 325 F. Place cookie balls on a greased baking tray and bake 12 minutes on the center rack. (They will look underdone when you take them out but will firm up while cooling).

Common Questions

My cookies look undercooked, is that normal?

Yes! These are a soft and chewy cookies, almost like a cookie dough cookie. They will not get browned in the oven. But don’t worry, they will firm up during cooling and be absolutely scrumptious!

Can I freeze these cookies?

Yes these Chewy Marshmallow Stuffed Vegan Cookies freeze beautifully! Simply place in an air-tight container and store in freezer for up to 3 months.

🫶🏼Homemade Vegan Buns, made easy. I make the 🫶🏼Homemade Vegan Buns, made easy. I make the dough in my bread machine. No, I’m not a grandma, and YES you should get a bread machine. Especially if you are vegan (as good vegan bread can be pricey and hard to find). 

~White Vegan Buns Recipe~ 

(Medium, makes ~8 buns)

Add ingredients to bread pan in order your machine calls for (some are liquid first, some last).

Ingredients 
1. Active dry yeast – 2 tsp
2. Bread flour – 3 cups (360 g)
3. Sugar – 2 tbsp
4. Salt – 1½ tsp
5. Olive oil – 2 tbsp
6. Non-dairy milk (unsweetened soy, oat, or almond) – ¼ cup (60 ml)
Warm water (110°F / 43°C) – 1 cup (240 ml)

Bread Machine Instructions
1. Add ingredients in the bread pan
2. Select the Dough setting 
3. When done, remove dough to a floured surface.
4. Divide into 8 equal pieces, roll into balls, and place on a parchment-lined baking tray.
5. Cover loosely with a towel, let rise 30–40 min until puffy.
6. Optional: Brush tops with non-dairy milk, sprinkle sesame or poppy seeds.
7. Bake at 375°F (190°C) for 15–18 min, until golden brown.
8. Cool on wire rack before serving.

🥔These Dill Pickle Hummus Smash Potatoes are crispy, savoury, and totally unexpected.

Ingredients
• 6 small Yukon potatoes
• 2 tbsp olive oil
• 3/4 tsp salt
• 1/4 tsp black pepper
• 3/4 tsp smoked paprika
• 1/2 tsp garlic powder
• 3/4 tsp onion powder
• Humble Seedz Dill Pickle Hummus
• Dill pickles, finely chopped
• Fresh dill, chopped
• Lemon wedges

Instructions
1️⃣ Boil potatoes in salted water until fork-tender. Drain and pat dry.
2️⃣ Heat oven to 425°F. Brush oil onto a parchment-lined sheet.
3️⃣ Use a glass to smash potatoes, then season, and roast 35–40 min until golden and crispy.
4️⃣ Spoon our Dill Pickle Hummus over hot potatoes and finish with chopped pickles, dill, and lemon.
