Amazing Coconut Sugar Vegan Chocolate Chip Cookies

No one who tries these Coconut Sugar Vegan Cookies will even guess these cookies are actually vegan! So what makes them taste so much like a classic chocolate chip cookie? Classic ingredients. This recipes mimics a conventional recipe pretty much to a tee. There’s no flax meal or chickpeas or even banana. (Though I love vegan cookies made with a variety of ingredients, for our purposes traditional works in this recipe).
I use PC Organics All Purposes Flour for the base of these cookies. I’ve made them before with half white and half spelt flour and they are delicious too (but not as classic). Sugar-wise a mix of PC Organics Coconut Sugar and Wholesome’s Organic Fair Trade Sugar makes up the sweet component.
Vegan Sugar in Your Coconut Sugar Vegan Cookies

Sugar is the main thing in baking that typically is not vegan. Your typical sugar is made from sugarcane and goes through a bone char process to get its clear white colour. So, most refined cane sugars are not suitable for vegans. Which means vegans need to search out sugars that are specifically vegan certified.
Coconut sugar usually comes straight from the coconut with no refinement, making it vegan-friendly. You can find the Pc Organics Coconut Sugar at your grocery store. Or, shop Wholesome’s line of vegan dedicated sugars and baking goods. They have a ton of varieties, even extra baking goodies like vegan molasses for your bread-making and vegan powdered sugar for icings.
Do You Need Pure Vanilla in Cookies?


Should always be using 100% pure Vanilla Extract in all of your baking? Typically you should use the finest ingredients. I love Simply Organics Pure Vanilla Extract. Sometimes, though an ingredient is hidden in the mix and so it doesn’t need to be the top of the line quality.
In oven-baked goods likes cupcakes, cakes and cookies, it’s nearly impossible to taste whether artificial vanilla or pure vanilla extract has been used.
Since 100% pure vanilla is pricey, it’s fine to save your good stuff for more vanilla-forward sweets, such as puddings, creams, and particularly for a lovely vanilla icing. This is where the taste difference is noticeable.
Almost all vanilla extracts are entirely vegan, including the artificial ones, so choose whichever vanilla suits. your need.
Vegan Chocolate Chips

These days it’s pretty easy to find vegan chocolate chips, even at your local grocer. PC Organics Bittersweet Chocolate Chips are widely available, Vegan Verified, and made with Fairtrade certified cocoa and cane sugar. Enjoy Life is another great popular brand that has a ton of vegan choices, from mini to large size chips, white chocolate, dark and rice milk chocolate chips!

Soft Vegan Chocolate Chip Cookies
Ingredients
Soft Vegan Chocolate Chip Cookies
- 1 cups all-purpose flour (or use half spelt flour, half all purpose)
- 1/2 tsp baking soda
- 1/4 tsp salt coconut sugar or sugar of choice
- 1/4 cup coconut sugar (or vegan sugar of choice)
- 1/4 cup vegan sugar (or vegan sugar of choice, I used Wholesome golden sugar)
- 1/3 cup vegan chocolate chips (I use Enjoy Life brand or vegan certified PC Organics)
- 5 tbsp milk of choice, plus more if needed
- 2 tbsp oil or melted vegan butter
- 1/2 tsp vanilla extract
Instructions
Soft Vegan Chocolate Chip Cookies
- Combine all dry ingredients in a bowl.
- Stir in wet ingredients to form a dough (keep stirring until a cookie-dough texture is achieved).
- If your dough is too dry, add a tbsp more of extra milk of choice.
- Form dough into a ball and wrap in saran wrap. Place dough in freezer into its cold, about 20 minutes. (Or you can place in refrigerator for 2 hours if you are not baking them right away).
- Preheat oven to 325˚F
- Form balls of dough, and place on a greased baking tray.
- Bake cookies for 11 minutes on the centre rack. (They will look undercooked but will firm up when let to cool).
- Let them cool on the baking tray 10 minutes.
If I don’t have vegan sugar can I use more coconut sugar ?!
You can! The cookies will be darker in appearance.
