Soft Vegan Chocolate Chip Cookies
- 1 cups all-purpose flour (or use half spelt flour, half all purpose)
- 1/2 tsp baking soda
- 1/4 tsp salt coconut sugar or sugar of choice
- 1/4 cup coconut sugar (or vegan sugar of choice)
- 1/4 cup vegan sugar (or vegan sugar of choice, I used Wholesome golden sugar)
- 1/3 cup vegan chocolate chips (I use Enjoy Life brand or vegan certified PC Organics)
- 5 tbsp milk of choice, plus more if needed
- 2 tbsp oil or melted vegan butter
- 1/2 tsp vanilla extract
Soft Vegan Chocolate Chip Cookies
Combine all dry ingredients in a bowl.
Stir in wet ingredients to form a dough (keep stirring until a cookie-dough texture is achieved).
If your dough is too dry, add a tbsp more of extra milk of choice.
Form dough into a ball and wrap in saran wrap. Place dough in freezer into its cold, about 20 minutes. (Or you can place in refrigerator for 2 hours if you are not baking them right away).
Preheat oven to 325˚F
Form balls of dough, and place on a greased baking tray.
Bake cookies for 11 minutes on the centre rack. (They will look undercooked but will firm up when let to cool).
Let them cool on the baking tray 10 minutes.
