The ultimate easy Vegan Turkey Roast with Skin! Juicy and flavourful, this plant-based roast boasts a crispy skin, roasted to perfection.

Making a homeade vegan turkey is actually is super easy! There’s no need to purchase an overly processed and overly priced grocery store vegan turkey. I promise you this tastes miles better than a boxed bird!

My Vegan Turkey Roast with Skin is so simple to make, and is really a perfected vegan turkey. It’s not chewy or overly dense like some of the store bough varieties are. This recipe makes a tender juicy plant-based turkey surrounded by a crispy and savoury ‘turkey skin’. Even your meat eater friends and family members will be blow away!

Bob’s Red Mill Vital Wheat Gluten Flour

I use Bob’s Red Mill Vital Wheat Gluten Flour to make this vegan turkey. Theirs is a high quality flour that produces the best seitan that is tender with the perfect meat-like texture. Some other gluten flours make vegan meats too tough and chewy, so I highly recommend going for Bob’s Red Mill, which you can purchase here.

Note that you CANNOT substitute vital wheat gluten flour for all purpose flour in this recipe. The Vital wheat gluten, which is the natural protein found in wheat, is necessary for creating seitan.

Why This Recipe is So Easy

You can make your vegan turkey ahead of time (up to the steaming and cooling step) and then roast it the day you want to eat it. In fact, it tastes even better if you make it ahead of time!

Literally all you do is add simple ingredients to a food processor to form your turkey ball. Steam it and then pop it in to the refrigerator once it’s cooled. The next day all you have to do is make the marinade, place the rice paper sheet on it and roast it. That’s it!

It makes it easy to cook up a big holiday vegan feast. Since my Vegan Turkey Roast with Skin recipe is so easy and can be prepped ahead, it gives you time to focus on all your sides. You can even make your vegan turkey ahead of time (up to the steaming and cooling step) and then freeze it and take it out to roast it when you need it.

Ingredients in This Recipe

For the Turkey
  • Tofu 
  • Vital wheat gluten *cannot be substituted
  • Nutritional yeast
  • Water
  • White miso paste
  • Onion powder
  • Cube vegetable bouillon
  • Garlic powder
  • Salt
  • Dried thyme
  • Ground sage
Crispy Skin
  • Vegan butter 
  • Maple syrup 
  • Garlic
  • Soy sauce
  • Fresh thyme 
  • Fresh rosemary
  • Black pepper
  • Rice paper

Making the Vegan Turkey

  1. Add the tofu, vital wheat gluten, nutritional yeast, water, miso paste, onion powder, vegetable broth powder, garlic powder, salt, thyme, and sage to a food processor. Using the S-blade, blend the mixture until it is mixed well and forms a ball in the food processor. If a ball doesn’t form then turn it into a ball by hand. *Do not knead the dough as it will make the turkey tough.

  1. Place the ball on a sheet of aluminum foil (you can line your foil with parchment if you like). Shape into the form you like, preferably slightly oval then wrap the foil around the ball securely but not too tightly. Then add a double layer of foil to ensure it is wrapped well.

  1. Add several inches of water to a large pot with a steamer basket and bring to a boil. Place the foil-wrapped ball into the steamer basket. Let steam for 1 hour, or until the internal temperature reaches at least 160F (71C). Remove and allow to cool. For the best texture let the ball cool overnight in the refrigerator (or up to 3 days).

Making the Crispy Skin & Finishing the Turkey Roast

  1. Preheat your oven to 400F (200C).
  2. In a small bowl add the melted butter, garlic, maple syrup, soy sauce, thyme, rosemary, and black pepper and mix.
  3. Remove the foil from the cooled turkey ball and place it in the baking dish. Brush generously with the maple butter garlic mix.
  1. Run the rice paper under running water and allow it to sit on a clean surface like a large plate for about 30 seconds until it begins to soften. Place the rice paper over the roast (covering it to the bottom and tucked down) then brush the butter garlic mixture over the rice paper to stick it to the roast.
  1. Bake the roast uncovered for 15 minutes. Brush with the remaining butter garlic mixture, then return to the oven and bake for another 15 – 25 minutes until the skin is golden brown.
  2. Allow the roast to cool for 10 minutes before slicing to let the skin get crispier as it cools. Serve!

Common Questions

Can I make this recipe ahead of time?

Yes! It’ actually better this way (but not necessary). Make the recipe following the directions up to the steaming step. Once the roast is steamed and allowed to cool, place the turkey in the refrigerator overnight. Then complete the steps to finish the turkey roast.

You can store the turkey covered in the fridge for up to 3 days 

Can I freeze this turkey?

Yes it also freezes beautifully. Simply make the roast, steam the roast and then let it cool completely before freezing. Store it in an airtight container. Once ready to use it, allow the turkey to thaw completely. Then add the rice paper skin and do the roasting.

Can I use something other than aluminium foil to wrap it in?

Absolutely! If you prefer to avoid contact with aluminum foil, wrap your roast in parchment paper, first then cover in foil. Or, wrap in parchment and then wrap in cheesecloth and tie it closed with cotton baking twine.

  • 1 package  firm tofu drained 14 oz
  • 1 1/2 cups vital wheat gluten cannot be substituted
  • 3 Tbsp nutritional yeast
  • 2 Tbsp water
  • 1 Tbsp white miso paste
  • 2 tsp onion powder
  • 1 cube vegetable bouillon
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp dried thyme
  • 1/4 tsp ground sage

Crispy Skin

  • 1/4 cup vegan butter melted
  • 1 Tbsp maple syrup optional
  • 4 cloves garlic minced
  • 1/2 tsp soy sauce
  • 1 Tbsp fresh thyme or replace with 1/2 tsp dried thyme
  • 1/2 Tbsp fresh rosemary
  • 1/4 tsp black pepper
  • 1 sheet rice paper

Instructions

There’s nothing more comforting that a bowl of piping hot miso soup in a lovely flavourful broth. My Quick Vegan Miso Soup is perfect for busy lunches, and is totally kid friendly!

What is Soybean Paste?

Soybean or miso paste makes the base of this miso soup, with a vegetable broth cube which is completely optional. It’s a delicious flavour base for plenty of plant-based recipes. I totally recommend keeping some in your refrigerator. This paste is used often in vegan homemade meats, so it is quite a helpful ingredient to have around.

So what actually is it?  Miso or soybean paste is a type of fermented bean paste made of soybean. It is also a byproduct of soup soy sauce production. It is totally vegan, although sometimes your grocer will place it in the seafood section of the grocery store.

Miso paste has an ultra-savoury, umami flavour that gives dishes a lovely depth. I use Hanamaruki White Type Shiro Miso Paste and GoBio! Organic Bouillon Cubes for the quick and easy broth in this recipe.

Add-Ins to Your Quick Vegan Miso Soup

This Quick Vegan Miso Soup recipe is meant to be super quick and easy, and made with simple ingredients. If you have more time, feel free to add in extra ingredients for a heartier meal. Be sure to let your miso soup cook a little longer if you add ingredients such as raw vegetables!

Optional Add-in Ideas:

Wakame: a dried cut seaweed that you can find at specialty Asian grocery stores. Seaweed can really enhance the flavour profile a miso, adding more deepth and an umami flavor to the broth.

The texture of wakame does take some getting used to if you are not familiar with this ingredient. If you can’t find wakame, there are many varieties of seaweeds available!

Mushrooms: a versatile ingredient for bulking up your miso soup and adding flavour. From Enoki, shimeji, shiitake, to oyster mushrooms, there are so many options!

Dried mushrooms (like shiitake or porcini) add even more umami flavor to your soup compared to the fresh varieties. Just make sure to rehydrate them well ahead of time.

Bok Choy: these lovely leafy greens make a crunchy and delicious addition that is full of nutrients. A whole baby bok choy looks dramatic and gorgeous in the centre of a bowl of miso soup!

Edamame:  though the same soybean that makes tofu, edamame is reminiscent of green peas and have a buttery yet firm texture with a hint of sweetness and nuttiness. Add a large handful to your miso soup and simmer for an extra 5 minutes.

How long will this soup last in the refrigerator?

In the refrigerator, miso soup can last up to 2-3 days. It is always best freshly made.

Can this miso soup be frozen?

Absolutely! In the freezer, this miso soup can last up to 2 months in an air-tight container.

Can I add in more ingredients?

Yes! See above my optional add-in suggestions. Be sure to let your miso soup simmer an extra 5 minutes or so in accordance to the add-ins you use.

White beans and wholesome oats make up the base of these delicious vegan sausages. A few pantry items and array of common spices are used in the sausage mixture. This recipe is so quick and easy and is a great non-processed option. These sausages are also gluten-free, as they contain only oats and no flour.

For the Vegan Eggs
  • Ground flax
  • Water
For the White Bean Vegan Sausages
  • Canned white beans canned, drained and rinsed (or dry beans, cooked)
  • Oats
  • Sunflower seeds or nuts of choice
  • Onion
  • Garlic 
  • Tomato paste or stewed tomatoes
  • Soy sauce

How to Make These Sausages

  1. In a small bowl, mix the ground flax with 1/4 cup of water and set the mixture aside for a few minutes to thicken.

  1. Strain and rinse canned white beans and pat dry with a paper towel or tea towel. Ensure they are dry.
  1. Using an immersion blender or food processor, pulse the oats and the sunflower seeds (they should still have some texture and not turn into fine flour).

  1. Form 7 sausages with your hands and set the sausages on a large plate lined with parchment paper. Place sausages into the fridge for about 20 minutes.

Can I use chia seeds instead of ground flax?

Yes! For the vegan egg mixture you can simply swap out the ground flax for chia seeds if you prefer to use chia in this recipe.

Can I play around with the spice mixture?

Totally! You can omit any spices or add any spiced you like. Simply taste the mixture first before rolling them into sausages to ensure you are satisfied with the taste.

Keep these sausages in an air-tight container in the fridge for up to six days.

Can I freeze these sausages?

My Mom’s Red Lentil & Barley Soup is a wholesome and incredibly flavourful soup, passed down from generations. This hearty meal is total comfort food for rainy fall days and chilly winter evenings.

There’s something so comforting about a big pot of from-scratch soup slowly simmering on the stovetop. My Mom’s Red Lentil & Barley Soup is super easy to make, and is slowly cooked on the stovetop for a super flavourful meal.

The plus side of a slowly cooked soup is it’s actually easier to make it ahead! You don’t have to rush to throw it together at meal time. A couple hours before lunch or dinner, simply throw ingredients in the pot and let it do it’s thing until it’s ready. This way you’re not trying to make a meal at the last minute when you’re too hungry.

  • Add olive oil to a large pot with diced onion, red pepper, garlic, shredded carrot and celery. Cook on medium heat until softened.
  • Add celery leaves, cumin, chilli powder, red pepper flakes, salt, pepper and chopped tomatoes.
  • Add 4 vegetable bouillon cubes and water to the pot and stir well to ensure cubes are dissolved.
  • Stir in red lentils, barley, and wild rice. Cook for 1 hour on low maintaining a simmer.
  • Add strained tomato and stir. Simmer for another 45 minutes on low. Turn off heat.
  • Add almond milk and stir well. Cover for 5 minutes.
  • Serve!

Pumpkin Lentil Loaf
For the Roasted Pumpkin
  • Pumpkin or substitute with squash
  • Olive oil
  • Salt
For the Pumpkin Lentil Loaf
  • Lentils 
  • Vegetable broth
  • Flaxseed meal
  • Water
  • Olive oil
  • Garlic 
  • Onion 
  • Celery 
  • Rolled oats
  • Oat flour or flour of choice
  • Dried thyme
  • Onion powder
  • Garlic powder
  • Cinnamon
  • Paprika
  • Cumin
  • Salt
For the Tomato Glaze
  • Organic ketchup
  • Apple cider vinegar
  • Maple syrup

How to Make Pumpkin Lentil Loaf

  1. Preheat oven to 450 degrees. Cut pumpkin (or squash) into 1 inch slices and drizzle with oil, salt, and pepper. Place on a baking sheet. Roast for 20-25 minutes or until tender. Remove from the oven and set aside.
  1. While the pumpkin cooks add 2 1/2 cups broth with lentils to a large pot. Bring to a boil, reduce heat, cover and simmer for about 35 minutes. Once done, remove lid and set aside to cool.
  1. In small bowl combine flaxseed meal and 1/3 cup water, set aside for 10 minutes in the refrigerator. This mixture will act as a binder and will thicken while sitting.
  1. In a medium sauté pan heat oil over medium heat. Sauté garlic, onion, and celery for about 5 minutes. Add spices mixing well to incorporate. Set aside to cool.
  1. Using an immersion blender, fork or potato masher, mash 3/4 of the cooked lentils.
  2. Remove skin from cooked pumpkin (or squash) and cut into small cubes. Add to a large bowl with the sautéed vegetables, lentils, oats, all the herbs, salt, oat flour and flax-egg, mix well.
  1. Taste, adding salt and more of any other herb as needed. Place mixture into a loaf pan lined with parchment paper overlapping the edges. Press mixture in firmly to the pan.
  2. Preheat oven to 350 degrees.

How to Make The Tomato Glaze

  1. Prepare your tomato glaze by combining all ingredients in a small bowl, mix well until incorporated. Spread evenly over top the loaf.
  1. Place in center of the oven, and bake in oven at 350 degrees for about 45 – 50 minutes. Let cool a bit before slicing. Top with fresh herbs.

Can I Make This Ahead of Time?

Yes you can make components ahead of time. Roast the pumpkin a day before if you’d like and keep it in the fridge.

You can also make the entire Pumpkin Lentil Loaf mixture a day before, or the day of and keep it in the fridge until ready to fill your loaf pan.

The glaze can be made a day ahead of the day of, and then simply poured over your loaf before baking it.

How Long Will it Last in the Fridge?

Leftovers of this Pumpkin Lentil Loaf will last up to 5 days in the refrigerator, preferable in an air tight covered container.

Can I freeze the Pumpkin Lentil Loaf?

Absolutely! You can store the loaf in the freezer for up to 2 – 3 months. To freeze, let the lentil loaf cool completely. Then slice into individual cut pieces with parchment paper in between fo easy removal. Store in the freezer in air tight container.

Pumpkin Lentil Loaf

  • 1 cup dry lentils or 2 ½ cups cooked lentils
  • 2 1/2 cups vegetable broth

  • 3 Tbsp organic ketchup
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp maple syrup

Instructions

Vegan Spicy Lentil Bolognese

A thick and savoury Vegan Spicy Lentil Bolognese with freshly stewed tomatoes, carrot, celery, and oregano.

This hearty homeade sauce is packed with vegetables, for a nutrient rich sauce. It’s made with fresh and wholesome ingredients for a comforting healthy meal.

Serve it overtop a bowl of al dente spaghetti or pasta of your choice and top with with fresh chopped parsley and a sprinkle of vegan parmesan cheese!

Why To Use Fresh Tomatoes

I like to use fresh tomatoes in this Vegan Spicy Lentil Bolognese recipe instead of canned. When you make a pasta sauce with canned tomatoes, it has a different texture and taste. Canned tomatoes are are soft and taste more acidic. This is because canned tomatoes are heated in the canning process and are therefore already peeled and cooked. 

Fresh tomatoes are more juicy and sweet. Plus, you can control how soft you want them if you are cooking yourself. It’s just as quick to use fresh tomatoes, as they will soon stew and break down in the heated saucepan. Real tomatoes are best in this recipe to get hearty and fresh tasting sauce.

Ingredients in Vegan Spicy Lentil Bolognese

  • Onion
  • Celery
  • Carrot
  • Garlic
  • Olive oil (As always I use a quality olive oil such as Acropolis Organic Olive Oil)
  • Fresh Tomatoes (Use fresh tomatoes, chopped in this recipe instead of canned tomato)
  • Fresh Oregano (you can substitute with 1/4 tsp dried oregano if preferred)
  • Salt
  • Dried Basil
  • Red chilli flakes
  • Maple syrup
  • Garlic powder
  • Cooked lentils (I used a small can of Bioitalia Organic Lentils, which are BPA FREE).

How to Make Vegan Spicy Lentil Bolognese

  1. Add chopped onions, carrots, celery to a saucepan with olive oil and medium low heat and stir until onions softened about 5 minutes.
  1. Add in chopped tomatoes, oregano, salt, basil and red chilli flakes, garlic powder and maple syrup and stir.
  2. Increase heat to medium or medium high and allow tomatoes to stew until sauce thickens (but still has some liquid to it). About 8 minutes. Taste an add more salt and garlic powder of desired.
Vegan Spicy Lentil Bolognese
  1. Add in cooked lentils and stir for another 2 minutes.
  1. Serve with pasta of choice and garnish with parsley or vegan parmesan cheese.

Tips for Making the Best Bolognese

Use canned lentils!

Canned lentils will give you the perfect consistency to your sauce. Canned lentils have been cooked to a perfect firmness and have a lovely texture. Sure you can use dry lentils that you cook yourself but they will typically be softer and can sometime end up with a mushy sauce.

Use brown or green lentils, not red

Red lentils are much too soft to use in this bolognese sauce.

If you use dry lentils cook them, then pat them dry!

Be sure to cook your dry lentils before using them in the recipe, and dry them so they don’t make your sauce mushy or watery.

Use fresh tomatoes, rather than canned

This will make a lovely hearty thick sauce rather than an overly ‘saucey’ sauce.

Add a touch of starchy water from your boiling pasta

if you find your Bolognese sauce to be a little on the thicker side and you want to thin it out (it also adds flavour).

What type of lentils can i use?

Use green or brown lentils, not red lentils as they are too soft. Cooked canned lentils will give you the best consistency in this sauce.

Can I use canned tomatoes?

It’s best the use fresh tomatoes in this recipe and let them stew and break down in the sauce. It’s quick and will taste the most fresh.

Can I Freeze this vegan spicy lentil bolognese?

Absolutely! Let the sauce cool completely. Do not leave it out for more than two hours, as that’s when bacteria can start to form. Once it’s cool, freeze in an air tight container for up to 3 months.

🫶🏼Homemade Vegan Buns, made easy. I make the 🫶🏼Homemade Vegan Buns, made easy. I make the dough in my bread machine. No, I’m not a grandma, and YES you should get a bread machine. Especially if you are vegan (as good vegan bread can be pricey and hard to find). 

~White Vegan Buns Recipe~ 

(Medium, makes ~8 buns)

Add ingredients to bread pan in order your machine calls for (some are liquid first, some last).

Ingredients 
1. Active dry yeast – 2 tsp
2. Bread flour – 3 cups (360 g)
3. Sugar – 2 tbsp
4. Salt – 1½ tsp
5. Olive oil – 2 tbsp
6. Non-dairy milk (unsweetened soy, oat, or almond) – ¼ cup (60 ml)
Warm water (110°F / 43°C) – 1 cup (240 ml)

Bread Machine Instructions
1. Add ingredients in the bread pan
2. Select the Dough setting 
3. When done, remove dough to a floured surface.
4. Divide into 8 equal pieces, roll into balls, and place on a parchment-lined baking tray.
5. Cover loosely with a towel, let rise 30–40 min until puffy.
6. Optional: Brush tops with non-dairy milk, sprinkle sesame or poppy seeds.
7. Bake at 375°F (190°C) for 15–18 min, until golden brown.
8. Cool on wire rack before serving.

Ingredients
• 6 small Yukon potatoes
• 2 tbsp olive oil
• 3/4 tsp salt
• 1/4 tsp black pepper
• 3/4 tsp smoked paprika
• 1/2 tsp garlic powder
• 3/4 tsp onion powder

Instructions
