Carrot Pesto & Vegan Ricotta Shells, stuffed with a carrot pesto and rich plant-based ricotta, baked and topped with fresh herbs and vegan parmesan.

Sauces are a perfect vehicle for sneaky veggies. The pesto sauce on these stuffed shells has fresh herbs, and the addition of nutrient-rich carrots.

So, if you’re looking to add more vegetables into your dishes to increase your daily nutrients, this is the perfect dish. The tofu ricotta is packed with protein, and the carrot-based pesto features a ton of healthy vitamins and minerals.

Adding more plants to your food can help lower blood pressure, reduce the risk of heart disease and stroke, prevent some types of cancer, lower risk of eye and digestive problems, and even positively effect your blood sugar, which can help keep appetite in check!

Ingredients in Carrot Pesto & Vegan Ricotta Shells

Carrot Pesto & Vegan Ricotta Shells
Carrot Pesto
  • Chopped Carrots
  • Cashews
  • Nutritional Yeast (My favourite brand is Everland Nutritional Yeast which you can purchase here)
  • Lemon juice
  • Olive oil (As usual I suggest a high quality 100% pure extra virgin olive oil like Acropolis Organic)
  • Water
  • Oregano
  • Garlic
  • Salt
Vegan Ricotta
  • Package firm tofu
  • Package cashew cheese or vegan cream cheese (I used Spread Em Cashew Cheeze Block in ‘The Big Smoke’ flavour. Another great option is Tofutti Plain Better Than Cream Cheese) 
  • Garlic powder
  • Salt 
  • Olive oil

  • Fresh oregano or thyme as garnish
  • Olive oil to drizzle
  • Vegan Parmesan (This is optional. A personally prefer Violife Parmesan Wedge)
  • 1 cup starchy pasta water removed from the water you cook the shells in

Tips for the Best Vegan Ricotta

Super Easy Vegan Ricotta Cheese

To make an easy and delicious Vegan Ricotta we’re going to mix together a firm tofu and a soft cashew cheese (or soft nut-based cheese of choice). The tofu adds that wetness that a classic ricotta cheese typically has, while the soft nut-based cheese gives a creaminess.

For best results use an extra firm, medium firm or firm tofu to make this ricotta mixture. I would steer away from using silken tofu for this ricotta, as it has too high of a water content.

For the cashew cheese component I used 200 gram package of Spread Em Cashew Cheeze Block in the flavour The Big Smoke. The smoky flavour mixed so well with the carrots and oregano. This brand of vegan cashew cheese has a slightly pungent and rich flavour that lends itself so well to this recipe.

Another great option that works beautifully is to use a vegan cream cheese instead of cashew cheese, such as Tofutti Plain Better Than Cream Cheese. You cannot, however used shredded vegan cheese!

Anyone who bites into these al dente stuffed shells would be hard pressed to tell that it is a plant-based ricotta filling.

Making the Vegan Ricotta

  1. Drain 1 package of tofu and crumble into a bowl.
  2. Add 1 block of soft cashew cheese (I used 200 gram package of Spread Em Cashew Cheeze Block in The Big Smoke flavour) and mix until combined.
  3. Add salt and garlic powder and mix.

Making the Carrot Pesto

  1. To a food processor add carrots, cashews, oregano, lemon juice, garlic, salt, nutritional yeast. (Or use a hand blender, or crush manually with a mortal and pestle.
Vegan Carrot Pesto
  1. Add olive oil and water until desire consistency is achieved. (Thicker for pasta and thinner if using as a pourable sauce).
  2. Continue to blend with food processor or hand mixer (or with pestle and mortar).
  3. Taste and add more salt, lemon juice and/or nutritional yeast if desired and mix
  1. Use in pasta or as dressing. Store leftovers in an air tight container for up to 1 week in the refrigerator, or in the freezer for up to 1 month.

  1. Cook pasta shells according to package until al dente. Once cooked and before straining the shells, save a cup or so of the starchy pasta water.
  1. Preheat oven to 425 F.
  2. Coat two 13 X 9 inch lasagna pans with a thin layer of starchy pasta water, along with 2 Tbsps of the carrot pesto. Spread it to coat the bottom of your pans.
  1. Stuff each pasta shell with the vegan ricotta and pesto and place in pans without overlapping. (approximately 12 large shells per pan, 24 in total).
  2. Drizzle with olive oil.
  3. Place in oven uncovered for 15 minutes.

Common Questions

Can I make this ahead of time?

Yes you can make the carrot pesto ahead of time and keep it in an airtight container in the fridge. Additionally you can make the vegan ricotta ahead of time and refrigerate it.

If you’d like to cook the shells ahead of time so they are ready to stuff you can, but I would do it the same day. Add olive oil to them so they don’t all stick together.

Can I use a different type of pesto?

You can use any type of pesto you want really. I also have a Mint Pesto & Vegan Ricotta Shells recipe that is absolutely divine.

What are the storage suggestions?

If you have leftovers simply store them in an airtight container in the refrigerator for 3-5 days. Simply warm up the shells in the microwave, on the stovetop or in the oven. Top with more fresh herbs and vegan parmesan!

My Vegan Carrot Pesto has a very light crunch with a savoury and earthy yet slightly sweet aroma. The nutritional yeast gives a hint of nutty cheesiness like a traditional pesto alla Genovese would have.

This healthy and unique twist on pesto is so flavourful and works beautifully on pasta. You can even use it on toast or in a smoked tofu sandwich. It’s super easy to make, plus due to its vegetable content, it’s packing plenty of nutritional value.

How do I use this vegan carrot pesto?

The best way is in a pasta. Simply add it to any type of pasta as you would a regular pesto. Drizzle with a bit of quality olive oil and a sprinkle of vegan Parmesan cheese!

WHAT TYPE OF NUTS CAN I USE?

In my pestos I typically like to use unsalted blanched cashews in this recipe. They’re cheaper than pine nuts, and give a lovely creamy taste to a pesto. You can use any nut really! Try walnuts, almonds, macadamia nuts, pecans, pistachios, pine nuts and more.

HOW LONG WILL THE PESTO LAST IN THE FRIDGE?

Ideally it’s always best to use pesto when it’s just freshly made. It will have the nicest flavour. Since homemade pesto has no preservatives, leftovers will only lasts for about 4 to 5 days in the refrigerator. Keep it in an air tight container so it remains fresh!

CAN THIS PESTO BE FROZEN?

You can freeze this pesto, like you can any pesto. However, a vegetable based pesto (as opposed to an herb based pesto) will change slightly when frozen. Ideally I would suggest to eat my Vegan Carrot Pesto fresh. If you like, though you can freeze the pesto in a glass jar or other freezer-safe container if you want to use it in large quantities. It will keep in the freezer for up to six months.

A refreshing Parsley & Mint Vegan Pesto made of parsley and mint, lemon, garlic and olive oil, with nutritional yeast for a depth of flavour.

Often we purchase parsley to beautifully garnish a dish and then are left with a big bunch in the refrigerator. This pesto is the perfect recipe to use up your fresh parsley before it wilts.

Pestos that depart from the common basil variety typically have a more sophisticated depth of flavour. Using herbs such parsley and mint in pesto is an easy way to elevate a dish from basic to extraordinary.

Pretty much all fresh herbs taste lovely together, though softer leafy herbs generally work better than the tough spindly kind. Think cilantro, mint, parsley, basil rather than thyme and rosemary etc…though these tougher herbs can work too, usually when paired with a leafy herb or greens.

Sweet & Sour Crispy Tofu Stir Fry

Sweet & Sour Crispy Tofu Stir Fry, made with an easy crispy tofu and a vegetable stir fry with tangy sweet & sour sauce.

A simple pan fried tofu is made nice and crispy with a touch of cornstarch in this recipe. The crunchy outside and soft middle really upgrades the texture of tofu. It’s super quick and easy to do, and is the perfect way to make tofu in any stir fried dish. A drizzle of sweet & sour sauce covers the tofu and vegetables, for an easy but elevated meal.

Ingredients in Sweet & Sour Crispy Tofu Stir Fry

For the vegetable stir fry
  • Carrots
  • Green peppers (or any peppers of your choice)
  • Celery
  • Green onions
Crispy tofu
  • Firm tofu (drain and pressed) This is a great Tofu Press is you need one!
  • Cornstarch (this is what makes the tofu crunchy when pan-fried)
  • Salt
  • Oil (for cooking)
Sweet & sour sauce
  • Vegan sugar
  • Apple cider vinegar
  • Vegan ketchup
  • Soy sauce
  • Water
  • Garlic
  • Cornstarch
  • Ground ginger

Instructions To Make This Dish

For the vegetable stir fry
  1. Wash and chop all vegetables and add to a non stick pan with a touch of oil.
  2. Sauté on medium low heat for 20 minutes, stirring often.
  3. Make rice according to package directions if serving with rice.
For the crispy tofu
  1. Drain and press tofu. Cut into small cubes.
  2. In a large bowl, add cornstarch and salt. Stir.
  3. Toss tofu cubes in the cornstarch mixture until evenly coated.
  4. Add a small amount of oil to a non-stick pan.
  5. Cook tofu on medium in the pan for about 5 minutes each side until crispy and golden brown.
For the sweet & sour sauce
  1. Add apple cider vinegar, vegan sugar, ketchup, soy sauce, cold water, garlic, ginger, and corn starch to a small saucepan.
  2. On medium heat stir frequently until it starts to boil. Allow sauce to boil for about 30 seconds then remove from heat.
  3. Drizzle the tofu and stir fry with sweet and sour sauce. Garnish with more fresh green onion.

Common Questions

Do I have to press the tofu?

You never have to press tofu, but when a recipe calls for it, it’s a good idea. Pressing tofu compresses it and squeezes out the extra water from it. This makes it firmer and drier, which means you can get a more dense interior and wonderfully crisp exterior when you cook it.

Can I use something other than cornstarch?

Coating tofu with a cornstarch mixture gives it a crunchy exterior with great flavour. Instead of cornstarch you can use potato starch, regular flour, or even gluten-free flour. Cornstarch, however, crisps up the best and is recommend for best results.

Can I use soft tofu?

Firm or extra-firm tofu has the least amount of liquid composition. That’s why it’s recommend for stir fries, especially if the tofu will be cubed. Technically you can use any kind, but a softer tofu will end up scrambled, whereas a firmer tofu will stay nicely cubed and have a denser texture!

  • Fusilli pasta (rinsed under cold water)
  • White beans
  • Radishes
  • Red onion
  • Iceberg or romaine lettuce (for a crunchy cool texture)
  • Fresh parsley
  • Vegan mayonnaise
  • Apple cider vinegar
  • Olive oil
  • Garlic powder
  • Dill
  • Salt & pepper

  1. Cook the fusilli to al dente according to package directions. Rinse well under cold water to cook down the pasta noodles and add to a large bowl.

  1. Wash, chop and dry iceberg lettuce and then add to the bowl. (Ensure you dry the lettuce well or it will dilute the flavour of your dressing). I prefer to use iceberg or romaine lettuce since they have a nice crunch that more tender varieties of lettuces don’t have.
  1. Add sliced radish, finely chopped red onion, parsley and white beans.
  2. Mix the contents of the bowl well.
  1. Add vegan mayonnaise, apple cider vinegar and olive oil and mix.
  2. Add all spices, salt and pepper. Mix well and taste. Add more mayo and salt if desired.
  3. Garnish with fresh parsley and serve, or place in refrigerator to cool further if desired.

Tips for The Best Pasta Salad

Cook pasta only until the noodles are tender and slightly underdone or al dente.

Why? Overcooked pasta will fall apart when you toss it with dressing and other ingredients. It will also taste mushy. A perfect pasta salad should have a tender texture.

Rinse your pasta under cool water to firm up the pasta noodles and start the cooling process.

Warm pasta salad doesn’t taste as great as cool pasta salad.

Add strong flavours!

Onion, garlic powder and radish, along with the mustard and apple cider vinegar from the dressing give this pasta salad a kick.

Add bright accents!

Fresh fruit and bright tasting herbs balance out the stronger flavours. In this recipe the in season juicy peaches balance out the strong flavours by adding a touch of sweetness.

Dry your washed lettuce, vegetables and fruit before adding them to the pasta salad!

There’s nothing worse than a puddle of water at the bottom of a salad. It will actually drastically affect the taste of your salad by diluting the dressing and the overall flavours. Avoid a bland pasta salad by drying all your ingredients well!

Add all of your pasta salad ingredients into a much larger bowl than you’ll serve the pasta salad in, and give everything a good toss.

The larger the bowl you make it in, the better chance you have of evenly distributing all the components with the dressing, without flinging it all around the kitchen. Then add your pasta salad to a lovely serving bowl along with salad spoons for guests and family to fill their bowls.

Cheesy Spicy Lentil Pie

A quick and healthy Cheesy Spicy Lentil Pie made with a 5 minute crust and a savoury lentil filling topped with vegan cheddar.

The perfect weekday meal, this healthy pie is made with my Easy Press in Pie Crust that takes just 5 minutes to throw together! You are welcome to use any pie crust you’d like, but I love this press in the pan crust for weeknights. It’s so quick to make and is fool proof.

Sure, a press in pan won’t get you those fancy crust edgings, but a cute and frilly ruffled pie pan adds a fancy touch to any pie!

The filling is made of wholesome ingredients such as lentils and a savoury blend of spices. I use a small banana pepper I got at my local farmer’s market to add a touch of spice to my Cheesy Spicy Lentil Pie.

You can use a small jalapeño with seeds removed, or a quarter of a green bell pepper if you prefer not to have spiciness in this pie,

Cheesy Spicy Lentil Pie Ingredients

Cheesy Spicy Lentil Pie

For the 5 minute pie crust

  • All purpose flour (or you can use a half all purpose and whole wheat flour)
  • Olive oil (or oil of choice)
  • Salt & cold water

For the savoury spice blend

  • Ground paprika
  • Ground oregano
  • Ground ginger
  • Ground cinnamon
  • Garlic powder
  • Salt & pepper

for the Pie filing

  • Cooked green lentils
  • Small onion
  • Vegetable stock
  • Bay leaf
  • Jalapeño or banana pepper without seeds
  • Olive oil
  • Tomato
  • Vegan cheddar cheese
  • Chopped parsley

Making This Pie Step By Step

Cheesy Spicy Lentil Pie

For the easy 5 minute pie crust

  1. Add flour and salt together in a medium bowl and mix.

  1. In a small bowl, whisk the olive oil with the water until it becomes light in colour. Right away, pour the entire water/olive oil mixture into the bowl of flour. Stir with a fork until the flour is mixed in with the liquids.

  1. Gather the dough together with your hands until it holds together. If more water is needed carefully add a teaspoon more water at a time.
  2. Dump the dough evenly into a pie plate and press gently until it covers the pan evenly.

For the Pie filling

  1. Add all dried spices, salt and pepper to a small bowl and mix until combined.
  1. Add finely chopped onion, finely chopped hot pepper (with seeds removed) and chopped tomato to a large saucepan on medium low heat with a drizzle of olive oil. Cook until onions soft and translucent.
  2. Preheat oven to 400 degrees F.
  3. Add cooked green lentils, vegetable broth and bay leaf and stir to combine.
  4. Cook 5-7 minutes on medium heat stirring occasionally.
  1. Fill pie crust with the pie filling and top with vegan cheddar cheese.
  2. Cook pie at 400 degrees F for 25-30 minutes until crust is golden brown.

Commonly Asked Questions

CAN THis PIE BE MADE AHEAD OF TIME?

Yes, but do not fill the pie crust until it is ready to be baked or your pie crusts will be soggy. Make the pie crust ahead of time and store it in the fridge separately from the pie filling (which can also be made ahead of time and stored separately in the fridge. Assemble the pie right before you are going to bake it!

CAN THis pie BE FROZEN?

Yes after the pie is baked it can be frozen (but not before they are baked). Tightly wrap the pie or store in an air-tight container and freeze pies for up to 4 months.

WHAT SHOULD I SERVE THis pie?

Traditionally a savoury pie is great with ketchup! A great vegan ketchup option is 365 Everyday Value Ketchup. I also love this Cheesy Spicy Lentil Pie with a side of steamed green beans!

5 Minute Press in Pan Pie Crust

  • 1 1/2 cups all purpose flour (or sub half with whole wheat flour)
  • 3/4 tsp salt
  • 6 Tbsp extra virgin olive oil or oil of choice
  • 3 Tbsp cold must be cold water, not room temperature

Pie Filling

  • 1/2 tsp garlic powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/2 tsp paprika
  • 3/4 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 small onion finely chopped
  • olive oil for cooking
  • 1 large tomato chopped
  • 1/2 small banana pepper (or 1 small jalapeño pepper) finely chopped and seeds removed to reduce heat
  • 1 1/4 cup cooked green lentils
  • 1/4 cup vegetable broth
  • 1 bay leaf optional
  • vegan cheddar cheese to top
  • handful chopped parsley garnish

Instructions

You do not want the dough to be too wet or it won't press together in the pan. (Your dough will be crumbly but it will come together when pressed in the pie pan).

  • Set aside in fridge while making the filling (Do not fill the pie crust with filling until you are ready to bake the pie, or your pie will be soggy)

🫶🏼Homemade Vegan Buns, made easy. I make the 🫶🏼Homemade Vegan Buns, made easy. I make the dough in my bread machine. No, I’m not a grandma, and YES you should get a bread machine. Especially if you are vegan (as good vegan bread can be pricey and hard to find). 

~White Vegan Buns Recipe~ 

(Medium, makes ~8 buns)

Add ingredients to bread pan in order your machine calls for (some are liquid first, some last).

Ingredients 
1. Active dry yeast – 2 tsp
2. Bread flour – 3 cups (360 g)
3. Sugar – 2 tbsp
4. Salt – 1½ tsp
5. Olive oil – 2 tbsp
6. Non-dairy milk (unsweetened soy, oat, or almond) – ¼ cup (60 ml)
Warm water (110°F / 43°C) – 1 cup (240 ml)

Bread Machine Instructions
1. Add ingredients in the bread pan
2. Select the Dough setting 
3. When done, remove dough to a floured surface.
4. Divide into 8 equal pieces, roll into balls, and place on a parchment-lined baking tray.
5. Cover loosely with a towel, let rise 30–40 min until puffy.
6. Optional: Brush tops with non-dairy milk, sprinkle sesame or poppy seeds.
7. Bake at 375°F (190°C) for 15–18 min, until golden brown.
8. Cool on wire rack before serving.

Ingredients
• 6 small Yukon potatoes
• 2 tbsp olive oil
