Using White Beans To Make Raspberry Blondies

White beans might not be the first ingredient that comes to mind when you think of dessert, but they can actually be a great addition to your baking recipes!

White beans are a great source of protein, fiber, and other important nutrients like iron and folate. Adding them to this dessert recipe boosts thei nutritional content, making these sweet treats a bit more balanced.

These lovely legumes also provide a healthier alternative to traditional baking ingredients like flour, making them totally gluten-free!

White beans also give added moisture to these White Bean Raspberry Blondies. The creamy texture of mashed or blended white beans gives a soft, tender crumb to these cute little blondie bites.

Ingredients in This Recipe

  • Cooked white beans
  • Baking powder
  • Baking soda
  • Salt
  • Maple syrup
  • Vanilla
  • Rolled oats
  • Coconut oil
  • Vegan dark chocolate chips
  • Fresh or frozen raspberries

How to Make This Recipe

  1. Preheat oven to 350 F.
  2. Combine all the ingredients, except the vegan chocolate chips, in a blender until the batter is mostly smooth.
  1. Stir in vegan chocolate chips.
  1. Pour the batter into a non-stick muffin pan and bake for 20-25 minutes. (Be careful not to undercook the blondies as the centre will remain gooey).
  2. Allow the blondies to cool and firm up.
  1. Once cooled, add 1/4 cup baking chips plus 1 tsp coconut oil to a bowl and microwave for 20 seconds, stir, then microwave for 10 more seconds. Do not overcook, as chocolate burns easily. Using a spoon, drizzle chocolate over each blondie.

Can I use a different bean in this recipe besides white beans?

I highly recommend using cooked (canned, or dried cooked) white beans in this recipe. However in a pinch you could also substitute the white beans for cooked chickpeas.

How do I store this White Bean Raspberry Blondies?

Store leftover in the refrigerator in an air-tight container for 2-3 days. For the freshest results, I suggest storing these blondies in the freezer, then simply take blondies out to thaw before consuming.

Can I use other fruit besides raspberries?

Absolutely, use any type of fruit you like. A great option that pairs well with chocolate is cherries.

🫶🏼Homemade Vegan Buns, made easy. I make the 🫶🏼Homemade Vegan Buns, made easy. I make the dough in my bread machine. No, I’m not a grandma, and YES you should get a bread machine. Especially if you are vegan (as good vegan bread can be pricey and hard to find). 

~White Vegan Buns Recipe~ 

(Medium, makes ~8 buns)

Add ingredients to bread pan in order your machine calls for (some are liquid first, some last).

Ingredients 
1. Active dry yeast – 2 tsp
2. Bread flour – 3 cups (360 g)
3. Sugar – 2 tbsp
4. Salt – 1½ tsp
5. Olive oil – 2 tbsp
6. Non-dairy milk (unsweetened soy, oat, or almond) – ¼ cup (60 ml)
Warm water (110°F / 43°C) – 1 cup (240 ml)

Bread Machine Instructions
1. Add ingredients in the bread pan
2. Select the Dough setting 
3. When done, remove dough to a floured surface.
4. Divide into 8 equal pieces, roll into balls, and place on a parchment-lined baking tray.
5. Cover loosely with a towel, let rise 30–40 min until puffy.
6. Optional: Brush tops with non-dairy milk, sprinkle sesame or poppy seeds.
7. Bake at 375°F (190°C) for 15–18 min, until golden brown.
8. Cool on wire rack before serving.

🥔These Dill Pickle Hummus Smash Potatoes are crispy, savoury, and totally unexpected.

Ingredients
• 6 small Yukon potatoes
• 2 tbsp olive oil
• 3/4 tsp salt
• 1/4 tsp black pepper
• 3/4 tsp smoked paprika
• 1/2 tsp garlic powder
• 3/4 tsp onion powder

Instructions
