Layers of yogurt, fruit sauce, and homemade granola make up this gorgeous fruity parfait using leftover Cranberry Sauce.

If you’re looking for a way to use up leftover cranberry sauce from the holidays, this is the way to do it! Cranberry sauce is essentially a jam. So, it can actually be used in a variety of delicious ways in many different recipes from breakfast to dinner to dessert.

Do not let your cranberry sauce go to waste, especially if you’ve made a big batch of my gorgeous Vegan Cherry Cranberry Sauce!

You won’t believe how divine this parfait using cranberry sauce is. The tarty freshness of the fruit-packed cranberry sauce mixes beautifully with the creamy yogurt and crunchy granola.

If you don’t have any leftover cranberry sauce, it is totally worth making a fresh batch especially for this parfait. Trust me, my Vegan Cherry Cranberry Sauce is the highlight of this parfait and tastes worlds better than a store bought jam. This recipe does not taste like leftovers! It is a luxurious parfait with complex flavours that pair together so well.

Ingredients in Leftover Cranberry Sauce Parfait

  • Leftover cranberry sauce
If making fresh cranberry sauce
  • water
  • vegan sugar
  • cranberries fresh or frozen
  • cherries fresh or frozen
  • orange 
Granola
  • rolled oats
  • coconut oil or canola oil
  • maple syrup
  • cinnamon
  • nutmeg
  • vanilla
  • salt
Yogurt
  • vegan yogurt of choice (such as Maison Riviera Coconut Milk Delight)
Topping
  • maple syrup

How to Make This Recipe

Cranberry Sauce (if not using leftover cranberry sauce)
  1. In a small saucepan over low heat, combine vegan sugar and water, stirring until sugar dissolves.

  1. Add cranberries and cherries and let simmer on medium low heat, stirring occasionally, until the fruit bursts and mixture is thickened, about 15 minutes. Stir in orange zest.
Vegan Cherry Cranberry Sauce
  1. Remove from heat and let cool completely. (It will thicken up more as it cools).
Granola
  1. Add oats, oil, spices, salt, maple syrup and vanilla to a bowl and mix.
  2. Add granola mixture to a non stick frying pan and toast on medium heat for 5-7 minutes, stirring occasionally. Remove from heat.
Assembling the Leftover Cranberry Sauce Parfait
  1. Add half a cup of vegan yogurt to a bowl or glass.
  2. Add ladle full of cranberry sauce on top of the yogurt.
  3. Drizzle with maple syrup and top with the homemade granola. (repeat to make a second parfait).

If you’ve made a new batch of cranberry sauce to make this recipe, store the sauce in an airtight container in the refrigerator for 10 to 14 days, or freezer-safe bag for up to one month.

How do I store the granola?

 You can store this homemade granola for about a month at room temperature in an airtight container.

What can I use to garnish the Leftover Cranberry Sauce Parfaits?

Garnish with fresh fruit, or a sprig of thyme or mint.

Can I make these parfaits ahead of time?

Yes you can assemble these parfaits the day you want to eat them. Wrap them with plastic wrap and keep in the refrigerator until consuming. Or, make each component of this recipe a few days ahead of time and then assemble when you’d like to make the parfaits.

Ingredients
  

Vegan Cherry Cranberry Sauce

  • 1/2 cup water
  • 1/2 cup vegan sugar
  • 4.5 ounces cranberries fresh or frozen
  • 1.5 ounces cherries fresh or frozen
  • zest of half an orange to garnish

Granola

  • 1 cup rolled oats
  • 1 Tbsp coconut oil or canola oil
  • 1 Tbsp maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla
  • dash salt

Vegan Yogurt

  • 1 cup vegan yogurt of choice

Maple syrup

  • drizzle maple syrup

Instructions

  • If using leftover cranberry sauce, then skip to granola step. In a small saucepan over low heat, combine vegan sugar and water, stirring until sugar dissolves.

🫶🏼Homemade Vegan Buns, made easy. I make the 🫶🏼Homemade Vegan Buns, made easy. I make the dough in my bread machine. No, I’m not a grandma, and YES you should get a bread machine. Especially if you are vegan (as good vegan bread can be pricey and hard to find). 

~White Vegan Buns Recipe~ 

(Medium, makes ~8 buns)

Add ingredients to bread pan in order your machine calls for (some are liquid first, some last).

Ingredients 
1. Active dry yeast – 2 tsp
2. Bread flour – 3 cups (360 g)
3. Sugar – 2 tbsp
4. Salt – 1½ tsp
5. Olive oil – 2 tbsp
6. Non-dairy milk (unsweetened soy, oat, or almond) – ¼ cup (60 ml)
Warm water (110°F / 43°C) – 1 cup (240 ml)

Bread Machine Instructions
1. Add ingredients in the bread pan
2. Select the Dough setting 
3. When done, remove dough to a floured surface.
4. Divide into 8 equal pieces, roll into balls, and place on a parchment-lined baking tray.
5. Cover loosely with a towel, let rise 30–40 min until puffy.
6. Optional: Brush tops with non-dairy milk, sprinkle sesame or poppy seeds.
7. Bake at 375°F (190°C) for 15–18 min, until golden brown.
8. Cool on wire rack before serving.

🥔These Dill Pickle Hummus Smash Potatoes are crispy, savoury, and totally unexpected.

Ingredients
• 6 small Yukon potatoes
• 2 tbsp olive oil
• 3/4 tsp salt
• 1/4 tsp black pepper
• 3/4 tsp smoked paprika
• 1/2 tsp garlic powder
• 3/4 tsp onion powder

• Dill pickles, finely chopped
• Fresh dill, chopped
• Lemon wedges

Instructions
1️⃣ Boil potatoes in salted water until fork-tender. Drain and pat dry.
2️⃣ Heat oven to 425°F. Brush oil onto a parchment-lined sheet.
3️⃣ Use a glass to smash potatoes, then season, and roast 35–40 min until golden and crispy.
4️⃣ Spoon our Dill Pickle Hummus over hot potatoes and finish with chopped pickles, dill, and lemon.
