Pulled Tofu Chicken
  • Firm tofu
  • Soy sauce or tamari sauce
  • Neutral oil of choice
  • Cumin
  • Paprika
  • Salt
Bbq Sauce
  • Vegan Ketchup (any organic ketchup is typically vegan)
  • Vegan Molasses (such as Wholesome Sweeteners Organic Molasses)
  • Vinegar
  • Paprika
  • Garlic powder
  • Onion powder
Coleslaw
  • Shredded purple cabbage
  • Shredded carrot
  • Parsley
  • Olive oil
  • Vinegar (white or apple cider vinegar)
  • Cumin
  • Salt

  • Vegan buns
  • Leaves of lettuce
  • Vegan mayonnaise (such as Earth Island Vegenaise)

How to Make This Recipe

Pulled Tofu Chicken
  1. Pat tofu dry and shred it with a grater.

  1. Toss tofu in mixture of soy sauce, oil, cumin, paprika and salt. Spread on a baking sheet and bake at 350 F for 30 minutes, stirring half way through.

Bbq Sauce
  1. Add all bbq sauce ingredients is a medium bowl and whisk until combined.
Coleslaw
  1. Add all coleslaw ingredients to a large bowl and mix until combined.
Assembling Vegan Bbq Pulled Chicken Sandwich
  1. Once tofu is finished baking, add to a large frying pan. Pour in the bbq sauce, stirring until combined on medium low heat for 3-5 minutes.
  1. Add a spread of vegan mayonnaise to the bottom bun, then add lettuce, generous amount of bbq pulled tofu chicken, coleslaw, then top with bun. Repeat for the remainder of sandwiches.

Can I make this recipe ahead of time?

Yes! Make components of this recipe ahead of time and then simply heat and assemble when you’re ready to serve. You can make the coleslaw ahead of time and store in the refrigerator. Same goes for the bbq sauce.

You can also make the shredded tofu and bake it. Once ready to eat simple mix it with the bbq sauce on the stovetop then assemble the sandwiches!

How long will These Last in the Refrigerator?

Store any coleslaw leftovers in an air-tight container in the refrigerator for up to 5 days. Store the bbq coated shredded tofu chicken in the refrigerator in an air-tight container for 3-4 days.

Bbq Sauce

  • 1 cup ketchup
  • 5 Tbsp molases
  • 2 Tbsp vinegar
  • 1 tsp paprika
  • 1 Tbsp garlic powder
  • 1/2 Tbsp onion powder

Coleslaw

  • 1 1/2 cups shredded purple cabbage
  • 1/4 cup shredded carrot
  • handful parsely finely chopped (optional)
  • 3-4 Tbsp olive oil
  • 3-4 Tbsp vinegar white or apple cider vinegar
  • 1/2 tsp cumin
  • 1/4 tsp salt

Assembling Vegan Bbq Pulled Chicken Sandwich

  • 4 vegan buns
  • 4 large leaves of lettuce
  • to taste vegan mayonaise

Instructions

🫶🏼Homemade Vegan Buns, made easy. I make the 🫶🏼Homemade Vegan Buns, made easy. I make the dough in my bread machine. No, I’m not a grandma, and YES you should get a bread machine. Especially if you are vegan (as good vegan bread can be pricey and hard to find). 

~White Vegan Buns Recipe~ 

(Medium, makes ~8 buns)

Add ingredients to bread pan in order your machine calls for (some are liquid first, some last).

Ingredients 
1. Active dry yeast – 2 tsp
2. Bread flour – 3 cups (360 g)
3. Sugar – 2 tbsp
4. Salt – 1½ tsp
5. Olive oil – 2 tbsp
6. Non-dairy milk (unsweetened soy, oat, or almond) – ¼ cup (60 ml)
Warm water (110°F / 43°C) – 1 cup (240 ml)

Bread Machine Instructions
1. Add ingredients in the bread pan
2. Select the Dough setting 
3. When done, remove dough to a floured surface.
4. Divide into 8 equal pieces, roll into balls, and place on a parchment-lined baking tray.
5. Cover loosely with a towel, let rise 30–40 min until puffy.
6. Optional: Brush tops with non-dairy milk, sprinkle sesame or poppy seeds.
7. Bake at 375°F (190°C) for 15–18 min, until golden brown.
8. Cool on wire rack before serving.

Ingredients
• 6 small Yukon potatoes
• 2 tbsp olive oil
• 3/4 tsp salt
• 1/4 tsp black pepper
• 3/4 tsp smoked paprika
• 1/2 tsp garlic powder
• 3/4 tsp onion powder

Instructions
1️⃣ Boil potatoes in salted water until fork-tender. Drain and pat dry.
2️⃣ Heat oven to 425°F. Brush oil onto a parchment-lined sheet.
3️⃣ Use a glass to smash potatoes, then season, and roast 35–40 min until golden and crispy.
4️⃣ Spoon our Dill Pickle Hummus over hot potatoes and finish with chopped pickles, dill, and lemon.
