This wholesome recipe for oven baked vegan deli slices is great for those avoiding processed foods. They’re also cheaper than store bought vegan meats, easy to make, and even gluten-free!

These simple to make deli turkey slices are a great healthy alternative to store-bought processed vegan lunch meats.

Many store bought plant-based meat substitutes have significantly high sodium levels. Additionally, some of these substitutes may include extra sugars, synthetic colourings, and nasty additives such as carrageenan and methylcellulose, which act as bulking agents.

Thankfully you can make your own wholesome vegan deli meat at home!

Tofu is considered a whole food that is nutritious and very minimally processed. It’s all you need, along with some simple pantry ingredients, to make these healthy oven baked Vegan Gluten-Free Deli Slices.

A Great Gluten-Free Option

Since these Vegan Gluten-Free Deli Slices don’t require any vital wheat gluten, they’re even suitable for those following a gluten-free diet.

Vital Wheat Gluten flour is a staple of many vegan pantries, renown as a core ingredient for making delicious seitan vegan meats like my Easy Vegan Seitan Chicken. It’s not, however, suitable for every vegan diet since it does contains gluten.

Vegan meat recipes using vital wheat gluten flour also tend to be more time consuming. Typically gluten flour vegan meat recipes require long lengths of time steaming. This vegan lunch meat cold cuts recipe can be made in less than 20 minutes from start to finish.

This recipe using tofu alone is also cheaper to make than those using vital wheat gluten flour, which a fairly pricey ingredient.

So, there are many benefits to this recipe that uses only tofu and spices to make delicious wholesome and healthy vegan deli slices.

Vegan Gluten-Free Deli Slices
  • Extra firm tofu
  • Tamari (or soy sauce if not gluten free)
  • Liquid smoke
  • Sage
  • Majoram
  • Nutmeg
  • Thyme
  • Garlic powder
  • Paprika
  • Salt
Toppings
  • Rosemary
  • Finely chopped dried pepper or red pepper flakes
  • Finely chopped basil
  • Coarse pepper

How to Make This Recipe

  1. Preheat oven to 450 degree Fahrenheit. Pat tofu with a paper towel to remove excess water (or use a tofu press).

  1. Add all ingredients except toppings to a food processor, a blender (or use a hand blender) and blend until smooth.
  1. Line 2 baking sheets with parchment paper and dump the mixture onto the sheets, dividing the mixture evenly between the two baking sheets. Smooth out with a spatula.
  1. Add another sheet of parchment on top of the smoothed out mixture and roll until mixture is evenly thin (approximately 1/8 of an inch. Do not roll too thin or they will crack during baking). Repeat for second sheet. Remove the top sheets of parchment paper.

  1. Sprinkle each flattened mixture with the spice toppings and bake for 15 minutes or until firm and slightly brown on top.
  1. Remove from oven and allow to cool.

🫶🏼Homemade Vegan Buns, made easy. I make the 🫶🏼Homemade Vegan Buns, made easy. I make the dough in my bread machine. No, I’m not a grandma, and YES you should get a bread machine. Especially if you are vegan (as good vegan bread can be pricey and hard to find). 

~White Vegan Buns Recipe~ 

(Medium, makes ~8 buns)

Add ingredients to bread pan in order your machine calls for (some are liquid first, some last).

Ingredients 
1. Active dry yeast – 2 tsp
2. Bread flour – 3 cups (360 g)
3. Sugar – 2 tbsp
4. Salt – 1½ tsp
5. Olive oil – 2 tbsp
6. Non-dairy milk (unsweetened soy, oat, or almond) – ¼ cup (60 ml)
Warm water (110°F / 43°C) – 1 cup (240 ml)

Bread Machine Instructions
1. Add ingredients in the bread pan
2. Select the Dough setting 
3. When done, remove dough to a floured surface.
4. Divide into 8 equal pieces, roll into balls, and place on a parchment-lined baking tray.
5. Cover loosely with a towel, let rise 30–40 min until puffy.
6. Optional: Brush tops with non-dairy milk, sprinkle sesame or poppy seeds.
7. Bake at 375°F (190°C) for 15–18 min, until golden brown.
8. Cool on wire rack before serving.

Ingredients
• 6 small Yukon potatoes
• 2 tbsp olive oil
• 3/4 tsp salt
• 1/4 tsp black pepper
