What Vegan Marshmallows to Use
I use Dandies Vegan Marshmallows in this recipe. Most conventional marshmallows contain gelatin (which comes from various icky animal parts). Ingredients in This Recipe
- All purpose flour
- Baking soda
- Salt
- Sugar (any organic sugar is vegan, or you can use a vegan specific brand (such as Wholesome Organic Golden Sugar)
- Semi sweet or dark chocolate chips (Camino Semi-Sweet Chocolate Chips)
- White chocolate chips ( Such as Healthy Crunch White Vegan Chocolate Chips or Camino Vegan White Baking Chips)
- Soy milk or milk of choice (oat, almond, etc)
- Oil (canola, vegetable oil, or melted coconut oil)
- Vanilla extract
- Mini vegan marshmallows (I used Dandies Vegan Marshmallows Vanilla Minis)

How to Make This Recipe
- Add all the dry ingredients except marshmallows in a medium mixing bowl and stir. Then add the wet ingredients, using 4 Tbsp of soy milk at first, and stirring until dough becomes less dry. Add more milk if needed until you get a dough consistency.

- Roll dough into 12 balls, then press three mini marshmallows into each cookie and re-roll into a ball.

- Preheat oven to 325 F. Place cookie balls on a greased baking tray and bake 12 minutes on the center rack. (They will look underdone when you take them out but will firm up while cooling).

Common Questions
My cookies look undercooked, is that normal?
Yes! These are a soft and chewy cookies, almost like a cookie dough cookie. They will not get browned in the oven. But don’t worry, they will firm up during cooling and be absolutely scrumptious!
Can I freeze these cookies?
