Smoky Maple Tofu Sandwich

Quick and healthy, this California-inspired vegan Smoky Maple Tofu Sandwich has sprouts, tomato, cucumber and vegan mayonnaise.

Ingredients
  

Smoky Maple Tofu

  • 2 slices firm tofu 3/4 of inch thick each
  • 1 tsp liquid smoke
  • 2 Tbsp soy sauce
  • 2 Tbsp maple syrup

Sandwich

  • 2 slices vegan bread
  • 1/2 tomato sliced
  • 1/4 cucumber sliced
  • 1/4 cup alfalfa sprouts
  • handful spinach optional
  • 1-2 Tbsp vegan mayonnaise spread

Instructions
 

Smoky Maple Tofu

  • Heat up a small pan on the stovetop to medium heat.
  • Cut 2 slices from a block of firm tofu. (Make your slices approximately 3/4 of an inch thick)
  • Add maple syrup, liquid smoke and soy sauce to a bowl and whisk together.
  • Place your tofu slices in the pan and pour the marinade over top, flipping tofu a few times to ensure both sides are evenly covered.
  • Cook each side for 3 minutes or until golden brown on each side.

Sandwich

  • Toast your bread if desired.
  • Add your sliced veggies, sprouts and tofu slices to your bread.
  • Add a spread of vegenaise to your sandwich.
  • Assemble your sandwich, cut in two and enjoy!
